  • 4 eggs,

  • 100g sugar,
  • 500g mascarpone,
  • 170 ml strong espresso,
  • 60 ml amaretto,
  • 5 tablespoons cocoa powder,

Bake biscuit yourself, or to save time use ladyfingers. For the dough, beat eggs, sugar and salt together until creamy, then mix in flour and baking powder through a sieve. Grease a springform pan, place in a pre-heated oven and bake (200°C) for approximately 20 min. Take the sponge dough from the springform pan, and let cool on a kitchen rack. Then cut across 2x so that you have 3 sponge layers for the biscuits. For the cream, separate the egg yolks, add the sugar and beat the yolks and sugar until fluffy, then stir in the mascarpone. Beat the egg whites until stiff and gently fold into the egg yolk mixture. Place the first sponge layer section on a form. Make espresso with amaretto and mix, then sprinkle the mixture on the sponge layer and spinkle with biscuit. Then add a third of the cream onto the sponge layer. Repeat the process with the next 2 sponge layers and close the top with a layer of cream. Let the Tiramisu chill in the refrigerator for at least 50min. Sprinkle before serving with cocoa powder. Yummy!
